Serves: 6-8 servings
Ingredients
  • 2 cups peaches (fresh, frozen or canned), chopped
  • 2 tbsp sugar
  • 6 cups whole milk
  • ½ cup rice, preferably short grain rice
  • ¾ cup sugar or to taste
  • ¼ tsp green cardamom powder
  • 2 tbsp pistachio or any other nuts
Instructions
  1. In a saucepan, add peaches and sugar. Start to cook on medium-high heat.
  2. Once the fruit started to cook, reduce the heat to medium-low and cook until mixture has reached the jam consistency. Remove from heat and let it cool.
  3. Rinse and soak rice in plain water for 30 minutes.
  4. In the meantime, in a large heavy-bottomed saucepan, pour milk. Add sugar and bring milk to a boil.
  5. Drain rice and add to the milk. Reduce heat to medium-low and stir frequently.
  6. Cook uncovered until rice has been cooked thoroughly and pudding has thickened; for about 40 minutes.
  7. Add cardamom powder and remove the pudding from heat.
  8. Cool the pudding to room temperature. Add cooked peaches and mix well.
  9. Add half of the chopped nuts to the pudding. Garnish pudding with the remaining chopped nuts.
  10. Serve chilled.
