Spicy melt-in-your-mouth fish baked in the oven.

Ingredients
  • 500 grams of salmon or any firm fish (cut into 1-2 inch pieces)
  • ¾ cup thick plain yogurt
  • ¼ tsp garlic paste
  • ½ tsp ginger paste
  • ¼ tsp green chili paste
  • ¼ tsp red chili powder
  • ¼ tsp ground black pepper
  • ¼ tsp salt or to taste
  • ¼ tsp coriander powder
  • 1 tbsp tandoori paste or powder (or a few drops of red food color)
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
For Garnishing
  • 1 small onion, thinly sliced into rings
  • 1 small green bell pepper, thinly sliced
  • 1 lime cut into wedges
  • A few sprigs of fresh coriander (optional)
Instructions
  1. Put yogurt in a cheese cloth and hang it for an hour to remove excess liquid.
  2. Gently pierce the fish pieces with a fork.
  3. In a medium bowl, add yogurt, garlic paste, ginger paste, green chili paste, red chili powder, ground black pepper, salt, coriander powder, tandoori paste, lime juice and olive oil. Mix until all ingredients are combined well.
  4. Add fish pieces to the yogurt marinade and gently rub the marinade onto the fish. Leave it in the refrigerator for at least 1 hour or overnight for the best results.
  5. Fish can be baked in the oven or on the barbecue.
  6. For oven - Preheat oven the 350F. Line a baking dish with foil and lightly spray with oil. Take fish pieces from the marinade and put it in the baking dish. Bake it for 10-12 minutes or until fully cooked turning over once or twice.
  7. For barbecue - Line the grill with foil wrap. Preheat the barbecue. Lightly spray the foil with oil. Take fish pieces from the marinade and place it on the foil. Turn the fish over frequently to prevent it from sticking. Cook fish for 10-12 minutes or until fully cooked.
  8. Garnish with onion rings, green pepper, lime and coriander sprigs. Serve hot with Pudina chutney.

Tandoori Paste or Powder – Tandoori paste or powder is a classic East Indian marinade made of a mixture of spices, garlic and ginger.
