Recipe type: Condiments
Cuisine: Indian
Serves: 1 cup
Ingredients
  • 2 cups full fat cream
  • ¼ tsp salt (optional)
  • Cold water as needed
  • Equipment:
  • Blender
  • Cheesecloth
  • Sieve
  • Clean Bowl
Instructions
  1. In a blender, add room temperature cream and blend it until cream thickens.
  2. Add about 1 cup of cold water and blend again until butter separates from the buttermilk. Add more water if required.
  3. Place a sieve over a clean bowl. Line the sieve with a cheesecloth. Remove the butter and buttermilk from the blender into the sieve and let the buttermilk drain into a bowl.
  4. Once the buttermilk has stopped draining, remove the bowl from underneath the sieve and move the sieve into the kitchen sink.
  5. Gently let the cold water run over the butter to wash the butter. With a clean fork, gently open the butter lump while the water is still running over the butter to wash away as much buttermilk as possible. This is called “washing the butter”. It is important to do this step to keep the butter fresh longer.
  6. Gather the cheesecloth from all corners and gently squeeze out the moisture.
  7. Transfer the butter to a container.
  8. Add salt if desired. Cover it and store in the refrigerator.
  9. Enjoy the freshly homemade butter.
