Pudina Chutney - Green Mint Chutney

Serves: 1 cup
- 1 cup fresh mint leaves
- ½ cup plain yogurt
- 2 green chilies
- 1 inch piece of fresh ginger, chopped
- ½ tsp salt or to taste
- 1 tbsp fresh lime juice
- In small chopper or blender, add 2-3 tablespoons of yogurt, mint leaves, green chilies, ginger, salt and lime juice. Blend to fine paste.
- Gently whisk the mint paste into the rest of the yogurt.
- Store it in a refrigerator for up to 7 days.
Note: Do not blend the entire ½ cup of yogurt in the blender. The mixture will become very liquid.
